It's Chocolate Shortbread Napolean with Chantilly Cream and Fresh Berries at
The 5 O'Clock Club, Ltd.

Chocolate Shortbread Ingredients
You will need:
1/4C butter (soft)
1/2C Powdered Sugar
1 egg yolk
1t Vanilla Extract
1 1/4 C Unsweetened Dutch Processed Cocoa Powder
1 1/4 C Flour

Instructions
Cream butter and sugar in mixer with paddle attachment for 1 minute, add yolk and Vanilla beat 1 minute more. Turn to low add slowly Flour and Cocoa until just blended. Turn dough out onto plastic wrap. Shape into disk then wrap and refrigerate 2 hours (up to 3 days)

Preheat oven to 350 degrees

On a lightly floured surface roll out dough to about 3/16 inch thick, using heart shaped cookie cutter press out several cookies and place on greased cookie pan and bake about 8 minutes. Transfer to wire rack to cool.

Chantilly Cream Ingredients
You will need:
2C heavy cream
1/4C Powdered Sugar
2t Vanilla Extract

Instructions
Whip cream in chilled bowl to soft peaks, sift in powdered sugar and add vanilla, beat until peaks are stiffer. Place cream into a pastry bag with star tip.

To Assemble Napoleons
Pipe a little cream onto dessert plate. Place one heart shaped cookie onto cream (this keeps it from slipping off plate) Pipe more cream onto cookie and top with a few raspberries and another cookie. Layer with more cream and Raspberries. Finish with one more cookie and more cream and top with more berries and (optional) mint leaves. To give your dessert a finished look decorate your plate with some colorful sauces such as: caramel sauce, chocolate sauce, semi sweet chocolate shavings, confectioners sugar. The sky is the limit.
