The Magnificent Seven New restaurants serve up good food with a side of charm Dennis Getto Milwaukee Journal Sentinel If recognizing a market niche and then filling it is the formula for success in business, then Norm Eckstaedt ought to score on this operation. Eckstaedt is the owner of the elegant Red Circle Inn in Nashotah and cut his teeth in the food business at local country clubs. The niche he noticed was a lack of places where golfers (many of them on business outings) could dine elegantly after a round on the course. Bristlecone Pines, with its scenic course and elegant clubhouse dining room, provided the setting. Chef R.C. Schroeder, formerly of Zydeco's, provides the food. With one successful Cajun operation under his belt, it would have been easy for Schroeder to have loaded his menu with Louisianian specialties. But he's already proven himself more talented than that. While blackened catfish fillets appear on the menu, they're served on saffron pasta in fresh fennel broth. Other dishes are far from Cajun cousins. Schroeder's been known to wrap shrimp in ahi tuna, crust scallops with crushed almonds and coat crab cakes with ground pistachios. In the midst of it all, he can also make a mean osso bucco. The best thing about the new restaurant is that it's not just for golfers. Those of us who have never birdied or sliced can nonetheless partake in the joy of a great meal without buying graphite clubs. * Prices and items may have changed since the publication of this article. *
